The Bomba variety offers us a firm and loose grain. Once cooked, the grain evolves positively, it does not break, but rather swells, hence its name. As the grain cools, it thickens and exudes part of the liquid absorbed during cooking, so it acquires all its flavor and juice after being removed from the heat. Another important advantage is its resistance to overcooking.
